1 lb chicken thighs
1 cup buttermilk
2 tablespoons Montreal steak seasoning
1 teaspoon cayenne pepper
1 cup flour
1 cup panko breadcrumbs
1 large egg
4 tablespoons beef tallow
1 cup chicken broth
1 cup jasmine rice
1 cup basmati rice
1 cup cucumbers, diced
1/2 cup pickled red onion
1/2 cup feta cheese, crumbled
1/4 cup chives, chopped
1/4 cup hot honey

Marinate chicken thighs in buttermilk, Montreal steak seasoning, and cayenne pepper overnight.

Cut marinated chicken thighs into bite-sized pieces.
