Measure out about 20 g of corn starch.
Measure out about 170 g of rice flour.
Add 1 teaspoon of Guar gum to the flour mixture and combine all the powders.
Set aside a little bit of rice flour for dusting.
Measure 1 teaspoon of freshly ground black pepper and add it to the mixture.
Measure 1 teaspoon of Himalayan salt or regular salt and add it to the mixture.
Measure 1 teaspoon of ground thyme and add it to the mixture.
Prepare 3 potatoes using a peeler, inserting a fork into the potato to hold it while peeling.
Chop the peeled potatoes into cubes using a sharp knife.
Transfer the potato cubes into a medium-sized pot and cover them with about 1 liter of water.
Boil the potatoes for about 12 to 15 minutes, stirring every minute after the water starts to boil.
Drain the potatoes and push them down the sifter with a wooden spoon, or crush them if preferred.
Allow the potatoes to rest for a couple of minutes after sifting.
Add salt, pepper, thyme, and the flour mixture to the potatoes and start kneading with your hands.
Shape the mixture into a ball that looks very soft.
Lightly flour the working surface and spread the dough into a circle about 26 cm (10 inches) in diameter.
Slice the circle diagonally twice and then horizontally and vertically to form patties.
Add 20 g of butter to a pan and spread it around.
Fry the patties for 3 minutes on each side until golden, ensuring not to overcrowd the pan.
