Add 3 cups of sifted all-purpose flour to a large bowl.
Add 2/3 cup of sugar and 1 teaspoon of baking powder to the flour and mix well.
Add 3 tablespoons of softened salted butter to the mixture and combine using hands until crumbly.
Add 1 large room temperature egg to the mixture and mix well.
Pour in 1 cup of Mexican table cream and mix until the dough is tacky and wet.
Knead the dough in the bowl until it comes together, adding flour if too tacky.
Transfer the dough to a floured surface and knead for about 5 minutes until smooth.
Cover the dough with a damp cloth and let it rest for 15 minutes.
Dust the work surface with flour and roll out the dough to about 1/2 inch thick.
Preheat a nonstick griddle on low heat.
Cut out rounds from the dough using a glass or biscuit cutter.
Place the rounds on the griddle, cooking for about 5 minutes on each side, adjusting heat as necessary to prevent burning.
Watch for the gorditas to puff up as they cook, flipping them carefully.
Once cooked, remove from the griddle and let cool slightly before serving.
