Place 2.5 cups of sugar in a pot with 1 cup of water and bring to a boil until the sugar dissolves.
Simmer a cinnamon stick in water until the flavor is infused, then turn off the heat and cover.
Separate the egg whites from the yolks and beat the egg whites until stiff peaks form.
Once the sugar water is boiling, turn off the heat and cover it to let it cool slightly.
Add the egg yolks to the beaten egg whites gradually, mixing well after each addition.
Combine 3 cups of rice flour and 1.5 cups of wheat flour with a teaspoon of baking powder, then gradually add to the egg mixture.
Mix well to eliminate lumps, first with a whisk and then with a spatula.
Grease the baking trays with margarine.
Preheat the oven to 450°F (232°C) 15 minutes before the batter is ready.
Pour the batter into the greased trays, filling them appropriately.
Bake until golden brown, checking for doneness with a toothpick.
Let cool slightly before cutting and serving.
