2 medium to large russet potatoes
2 tablespoons canola oil
½ teaspoon salt
1/8 teaspoon onion powder

Peel potatoes and dice into ¼-inch cubes.

Add canola oil to a medium sauté pan and heat on medium to high heat.

Stir so that the oil coats all of the potatoes and cook for about 1 minute.

Turn the heat to low, cover with a lid and cook for about two minutes.

Remove the lid and stir potatoes, then replace the lid and cook for another 2 minutes, or until potatoes are crisp and soft.
