Heat a large fry pan over medium heat and add 1/2 cup of extra virgin olive oil (120 ml).

Cut 2 medium Yukon Gold potatoes into rounds that are 1 cm thick.

Add the sliced potatoes to the pan in a single layer, cooking in batches for about 3 minutes per side until lightly fried. Transfer to a plate with paper towels.

Pat 4 cod fillets (7 oz each, 200 g) dry with paper towels, season with sea salt and freshly cracked black pepper, and coat in all-purpose flour.

Once the potatoes are done, set them aside and season with a little sea salt.

In the same pan, add the cod fillets in a single layer and cook for 2 minutes per side until lightly golden fried. Transfer to the plate with the potatoes.

Add the chopped onion and garlic to the pan, sautéing for 3-4 minutes until the onion is translucent.

Add 1 tbsp of all-purpose flour (8 g) to the pan and mix continuously for 1-2 minutes to cook off the flour flavor.

Pour in 1/2 cup of tomato sauce (120 g) and 1/2 cup of white wine (120 ml), mixing well and seasoning with sea salt and freshly cracked black pepper. Simmer for 3-4 minutes without stirring.

Add 2 cups of vegetable broth (480 ml) and 1/4 tsp of saffron threads (0.17 g), turn up to high heat, and simmer for 5 minutes until the sauce thickens slightly.

Remove the pan from heat and pour half of the sauce into a 13 x 9 inch (33 x 23 cm) ovenproof casserole dish.

Layer the fried potatoes over the sauce, followed by the fried cod fillets, and spoon the remaining sauce over the top.

Bake in a preheated oven at 210°C (410°F) for about 15 minutes until the fish and potatoes are cooked through.

Remove from the oven and top with chopped fresh parsley before serving.
