4 servings
Servings4
2 cups fresh blueberries
1/2 cup sugar
1 tbsp cornstarch
1 tsp lemon juice
1/2 tsp vanilla extract
8 oz cream cheese, softened
1/2 cup powdered sugar
1/2 tsp cinnamon
4 large flour tortillas
1/4 cup vegetable oil
1/2 cup whipped cream (for serving)
1/4 cup chocolate sauce (for drizzling)

Quantities are estimated based on standard recipes for your convenience. The actual ingredients used in this video are accurate.

1

In a saucepan over medium heat, combine blueberries, sugar, cornstarch, lemon juice, and vanilla extract. Cook until the mixture thickens, about 5-7 minutes. Remove from heat and let cool.

2

In a mixing bowl, beat the softened cream cheese and powdered sugar until smooth. Stir in the cinnamon.

3

Lay a tortilla flat and spread a generous amount of the cream cheese mixture in the center, followed by a spoonful of the blueberry mixture.

4

Fold the sides of the tortilla over the filling, then roll it up tightly to form a chimichanga. Repeat with remaining tortillas.

5

In a large skillet, heat the vegetable oil over medium heat. Once hot, add the chimichangas seam-side down and fry until golden brown, about 2-3 minutes per side.

6

Remove the chimichangas from the skillet and place them on a paper towel-lined plate to drain excess oil.

7

Serve warm, topped with whipped cream and drizzled with chocolate sauce.
