Remove the skillet from heat and drain excess oil, reserving a little for later.
In a bowl, beat the eggs and season with salt and black pepper.
Add the cooked potatoes and onions to the bowl with the eggs, mixing gently to combine.
Wipe the skillet clean and add a little reserved oil, heating over medium heat.
Pour the egg mixture into the skillet, spreading it evenly.
Cook for about 5 minutes, until the bottom is set and lightly browned.
Carefully flip the tortilla using a plate and cook the other side for another 5 minutes until golden and cooked through.
Slide the tortilla onto a serving plate and let it cool slightly before slicing.
