Sweet potatoes add nutrients and flavor, while carrots are often cheaper.

Cook stew meat with water and salt only for about 1 1/2 to 2 hours or until tender. Keep the broth aside.

In a medium pot heat oil then add chopped onion and cook for a few minutes until it becomes slightly brown.

Add potato cubes and let them fry for a few minutes.

Add cooked meat and mix all together for a few minutes.

Add all the spices and salt and mix for a few minutes then add the meat broth and the boiling water then cover and bring to boil. (if you like your stew to be thick then don't add a lot of liquid)

Add tomato paste once the liquid comes to boil and mix well then cover and cook over low-medium heat.

Check for the salt and spices.

Make sure to stir gently from time to time.

When the potato is fork tender and the liquid is thick then the stew is ready. The stew will thicken as it sits.

Leave the stew for about 15-30 minutes before serving time so all the flavor develop richer.
