Peel and cut off the ends and tips of the carrots.
Cut the carrots into sticks about 2.5 to 3 inches long.
Set aside smaller diameter carrot tips to cook with the rest.
Cut the lemon in half and zest about a teaspoon from one half.
Juice half of the lemon.
In a medium-sized saucepan, bring water to a boil and add salt.
Add the carrots to the boiling water.
Allow the water to come back to a boil, then reduce to a slow simmer and cover the pot.
Cook the carrots for 6 minutes.
Strain the carrots and pour cool water over them to stop the cooking process.
Melt butter in a saucepan, ensuring the pan is not too hot to avoid scorching the butter.
Add the lemon juice, about a teaspoon of salt, and a tablespoon of honey to the melted butter.
Reduce the sauce while stirring continuously to prevent sticking.
Once the sauce is bubbly, add the carrots back into the pan.
Add the lemon zest and dill to the carrots and lightly toss them in the glaze.
