Boil water in a pot.

Add 1 pound of shredded and sliced carrots to the boiling water.

Cook the carrots for about 5 to 6 minutes until tender.

Drain the carrots and return them to the pan.

Add 1 tablespoon of fresh lemon juice to the carrots.

Add 2 tablespoons of honey to the pan.

Turn the heat back on to medium-low.

Cook the mixture for about 5 minutes until the carrots are coated and the liquid reduces slightly.

Add a pinch of salt and pepper to the carrots in the pan.

Toss the carrots to coat them in the glaze.

Transfer the glazed carrots to a bowl.

Garnish with 1/4 cup of chopped fresh parsley.
