Bring eggs to room temperature for about 1 hour.
Let milk sit in measuring container for 5-10 minutes to take the chill off.
Melt 3 tablespoons of butter in a microwave-safe bowl for about 30-45 seconds and let it cool.
Measure 1.5 cups of all-purpose flour using a large measuring spoon and a knife to level it off.
Blend the eggs in a blender one at a time, ensuring no shells get in.
Add 1.5 cups of lukewarm milk to the blender.
Add 0.25 teaspoon of salt (or 3/4 teaspoon if using unsalted butter).
Blend the mixture for 1 minute.
Add the flour and melted butter to the blender and blend for 2 minutes.
Let the batter rest for 5 minutes.
Preheat the oven to 450°F (232°C) and lower the rack to just above the lowest level.
Prepare the popover pan or muffin tin by coating it with melted butter or non-stick spray.
Place the greased pan in the oven for 2 minutes to heat it up.
Fill each cup of the pan with batter, coming close to the edge.
Bake in the oven for 18 minutes without opening the door.
After 18 minutes, lower the oven temperature to 350°F (177°C) and continue baking for 10 minutes.
Check for doneness by stabbing the center with a pairing knife to release air.
Remove from the oven and pop out the popovers.
