Set the burner to medium-high heat and melt 1 tablespoon of butter with 1 tablespoon of avocado oil.
Add 2 bell peppers (colored) to the skillet and sauté for a few minutes until softened.
Season the peppers with salt and pepper, then add 1 onion and continue to sauté until soft and translucent.
Add 2 teaspoons of minced garlic and cook for 1 minute.
Add 1 can of cream of chicken soup and 1 can of cream of celery soup to the skillet.
Pour half a cup of chicken broth into each can of soup to get the remaining soup out, then add to the skillet.
Add 1 can of drained corn and 1 can of rotel tomatoes (juice included).
Add 2 cups of shredded cooked chicken (from a rotisserie) to the mixture.
Season with 3 tablespoons of homemade taco seasoning and cook for about 4 minutes until heated through.
Taste the mixture for seasoning, adjusting if necessary, and continue to heat for another 2 minutes.
Turn off the burner and prepare to build the casserole.
Cut 10 flour tortillas into strips (about half an inch to an inch wide).
Place a quarter of the meat mixture at the bottom of a 9x13 baking dish without any cooking spray.
Layer half of the tortilla strips over the meat mixture.
Add half of the remaining meat mixture on top of the tortillas.
Sprinkle half of the shredded cheddar cheese over the meat mixture.
Layer the remaining tortilla strips over the cheese.
Add the rest of the meat mixture on top of the tortillas.
Top with the remaining shredded cheddar cheese.
Spray a sheet of foil and place it sprayed side down over the casserole.
Preheat the oven to 350°F (175°C) and bake the casserole for 40 minutes.
Remove the foil and bake for an additional 20 minutes until the cheese is melted and golden brown and the casserole is bubbly.
Let the casserole rest for 10 to 15 minutes before serving.
