Preheat the oven to 400°F (200°C).
Peel and slice the potatoes into thin rounds.
Boil the potato slices in salted water for 10-15 minutes until slightly tender; drain.
In a skillet, cook the bacon until crispy; remove and set aside.
In the same skillet, sauté the onions and garlic until softened, about 5 minutes.
Add the cooked bacon back to the skillet with the onions and garlic; mix well.
Pour in the white wine and simmer for 2-3 minutes until slightly reduced.
In a large baking dish, layer half of the potatoes, followed by the bacon mixture.
Spread half of the cream over the layer, then add half of the reblochon cheese, sliced.
Repeat the layering with the remaining potatoes, cream, and cheese.
Sprinkle with black pepper and salt to taste.
Cover the dish with foil and bake for 25 minutes.
Remove the foil and bake for an additional 15-20 minutes until golden and bubbling.
Let cool slightly before serving; garnish with fresh parsley.
