4 cloves garlic
1 jalapeno
1 medium red onion
8 cups water
1 medium chayote
1 lb cassava (yuca)
2 cups cabbage
2 medium carrots
1 cup celery
1/2 cup parsley
1/4 cup mint

Place beef ribs in a large pot with garlic and jalapeno.

Add chopped red onion and cover with water.

Bring to a boil.

Add cassava (yuca) and lower heat to medium-low, cover for 15 minutes.

Add cabbage, chayote, and chopped carrots, cover and cook for another 15-20 minutes until carrots are soft.

Deep fry remaining cassava (yuca) slices until golden brown for about 4 minutes.
