2 cups of sliced squash such as zucchini
1 sweet onion
1 white or sweet potato
winter squash (butternut, acorn)
jalapeno peppers
1 teaspoon garlic, minced
½ teaspoon cumin
½ teaspoon Mexican oregano
½ teaspoon red chili powder
1 tablespoon tahini
2 tablespoons lime juice
1 teaspoon low sodium tamari
2 tablespoons low sodium vegetable broth

Cut all the vegetables into approximately 1/4 inch thick slabs.

For any long cooking vegetable such as winter squash or any potatoes, pre-cook by blanching or steaming in a microwave steamer for 3 minutes with a couple tablespoons of water.

Mix marinade ingredients and place in a large shallow baking dish.

Add the vegetables to the marinade and marinate for 30 minutes or up to a couple hours.

Heat a grill or grill pan to medium high heat.

Make sure the pan is hot before adding the vegetables. Don’t crowd them on the grill.

After 3-4 minutes, or when grill marks appear, turn everything over.

Reduce the heat to low and continue grilling. On an outdoor grill, close the lid and cook covered.

Remove them as they cook as some will take longer than others.
