Make the marinade by mixing olive oil, balsamic vinegar, fresh minced garlic, Italian seasoning, grated Parmesan cheese, salt, and pepper in a bag.
Add your choice of vegetables to the bag, including bell peppers, red onions, broccoli, cauliflower, zucchini, squash, mushrooms, asparagus, and green beans.
Zip the bag closed and toss to coat the vegetables in the marinade.
If you have time, let the vegetables marinate in the refrigerator for 30 to 45 minutes for better flavor absorption.
If short on time, you can go directly to the grill after tossing the vegetables in the marinade.
Place the marinated vegetables in a grill basket to avoid losing smaller pieces through the grates.
Grill the vegetables over direct heat at a temperature of about 400 to 450°F, tossing them every few minutes.
Cook the vegetables for 8 to 12 minutes until they are tender-crisp and have a nice char.
