Heat a small fry pan over medium heat and add 1/4 cup of extra virgin olive oil.
Add 2 cups of blanched marcona almonds to the pan and mix continuously for 5 to 6 minutes until golden.
Remove almonds from heat, transfer to a dish with paper towels, and season with fine sea salt.
Let the almonds cool for 5 to 10 minutes before serving.
Slice 12 button mushrooms into 1/4 inch thick slices and thinly slice 4 cloves of garlic.
Heat a large frying pan over medium-high heat and add 1/4 cup of extra virgin olive oil.
Add the sliced garlic to the pan and cook for about 20 seconds until aromatic.
Add the sliced mushrooms and mix continuously for about 3 minutes until cooked.
Season with 1/2 teaspoon of sweet smoked Spanish paprika, a pinch of sea salt, and freshly cracked black pepper, then transfer to a serving dish.
Slice a 7 ounce block of queso Manchego into 1/4 inch thick slices and place in a serving dish.
Cut 2 roasted red bell peppers into 1/4 inch thick strips and place on top of the cheese slices.
Drizzle with extra virgin olive oil and sprinkle with dried rosemary.
Thinly slice 1 large yukon gold potato into 1/4 inch thick rounds and place on a baking tray lined with parchment paper.
Brush each potato slice with extra-virgin olive oil and season with sea salt and freshly cracked black pepper.
Bake the potatoes in a preheated oven at 250 degrees Celsius (475 degrees Fahrenheit) until done, then broil for 2 to 3 minutes.
In a bowl, combine 1/2 cup of mayonnaise, 1 shredded clove of garlic, 1/2 teaspoon of sweet smoked Spanish paprika, 1/2 teaspoon of fresh lemon juice, and 1 tablespoon of extra virgin olive oil, whisk until combined.
