1/2 tsp salt
1/4 tsp black pepper
2 tbsp olive oil
2 tbsp butter
1 lemon (juiced)
2 tbsp fresh parsley (chopped)

Rinse the sole fillets under cold water and pat them dry with paper towels.

In a shallow dish, combine the flour, salt, and black pepper.

Dredge each sole fillet in the flour mixture, shaking off any excess flour.

In a large skillet, heat the olive oil and butter over medium heat until hot.

Add the sole fillets to the skillet and cook for about 3-4 minutes on each side, or until golden brown and cooked through.

Remove the fillets from the skillet and place them on a serving plate.

In the same skillet, add the lemon juice and scrape up any browned bits from the bottom.
