  • 4 large russet potatoes
  • 1/2 cup sour cream
  • 1/2 cup cream cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup milk
  • 1/4 cup green onions, chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked bacon, crumbled
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. 1Preheat the oven to 400°F (200°C).
  2. 2Wash and pierce the russet potatoes with a fork. Bake them in the preheated oven for about 45-60 minutes, or until tender.
  3. 3Once the potatoes are cool enough to handle, cut them in half and scoop out the insides into a large mixing bowl, leaving a small border of potato in the skins.
