- 2Shave the Brussels sprouts thinly using a mandoline or sharp knife.
- 3Place the shaved Brussels sprouts in a large bowl.
- 4Drizzle olive oil and lemon juice over the sprouts.
- 5Toss the mixture until the sprouts are well coated.
- 6Add grated Parmesan cheese, toasted nuts, and dried cranberries to the bowl.
- 7Season with salt and black pepper to taste.
- 8Toss the salad again to combine all ingredients evenly.
- 9Let the salad sit for 10 minutes to allow flavors to meld.

Instructions

- 2Wash and pierce the russet potatoes with a fork. Bake them in the preheated oven for about 45-60 minutes, or until tender.
- 3Once the potatoes are cool enough to handle, cut them in half and scoop out the insides into a large mixing bowl, leaving a small border of potato in the skins.
- 4To the bowl with the potato insides, add sour cream, cream cheese, milk, garlic powder, onion powder, salt, and black pepper. Mash until smooth and well combined.
- 5Stir in the crumbled bacon, chopped green onions, and half of the cheddar cheese. Mix until evenly distributed.
- 6Spoon the potato mixture back into the potato skins or into a greased casserole dish if preferred.
- 7Top with the remaining cheddar cheese and mozzarella cheese.
- 8Return to the oven and bake for an additional 20-25 minutes, or until the cheese is melted and bubbly.
