1/2 cup red onion
1 cup cherry tomatoes
1/2 cucumber
1 can chickpeas (15 oz)
1 cup celery sticks
1/2 cup roasted red peppers
1/2 cup calamata olives
3 tablespoons apple cider vinegar
1 tablespoon mustard
2 tablespoons capers
1/4 cup nutritional yeast
3 tablespoons olive oil
1 tablespoon sesame oil
1 tablespoon neutral flavored oil
1 lb Beyond Chicken strips
2 tablespoons barbecue rub

Chop romaine lettuce and place it in a large bowl.

Chop half of a red onion and add it to the bowl (optional).

Half cherry tomatoes and add them to the bowl.

Half a cucumber and add it to the bowl.

Strain a can of chickpeas, saving the aquafaba, and add the chickpeas to a container.

Dice celery sticks at an angle and add them to the bowl.

Chop roasted red peppers and add them to the bowl.

Combine the aquafaba and the juice from the jar of roasted red peppers in a container.
