Mix flour, water, yeast, and sugar in a bowl until combined.
Knead the dough on a floured surface for about 10 minutes until smooth.
Let the dough rise in a warm place until doubled in size, about 1 hour.
Sauté onions in olive oil over medium heat until translucent, about 5 minutes.
Add spinach and parsley to the onions, cooking until wilted, about 3 minutes.
Remove from heat and mix in cheese, black pepper, and salt to taste.
Preheat the oven to 200°C (400°F).
Roll out the dough on a floured surface to a thickness of about 1 cm.
Cut the dough into circles or squares, depending on preference.
Place a spoonful of the filling in the center of each piece of dough.
Fold the dough over the filling and seal the edges tightly.
Brush the tops with beaten egg and sprinkle with sesame seeds.
Place on a baking sheet lined with parchment paper.
Bake in the preheated oven for 25-30 minutes until golden brown.
Remove from the oven and let cool slightly before serving.
