Chocolate & Almond Mousse

180 g dark chocolate with Babylonstoren almonds, whole and salted
180 g milk chocolate with Babylonstoren nuts, roasted and salted
180 g dark chocolate with Babylonstoren almonds, crushed and raw with no added sugar
180 g white chocolate with Babylonstoren almonds, crushed and raw
3 egg whites at room temperature
3 tablespoons sugar
1 avocado (for vegan option)

Chop the chocolate and melt in a double boiler over low heat.

Remove from heat.

Whisk 3 egg whites until fluffy.

Gradually add sugar and beat until glossy and firm peaks form.

Add a large dollop of egg white into the melted chocolate and gently fold through until combined.

Transfer chocolate and egg white mixture to remaining egg whites and fold through until combined.

Spoon into individual glasses or in a large bowl.

Refrigerate for 2–3 hours to set.

Serve garnished with fresh fruit and mint.
