Cut two large carrots into one inch pieces.
Quarter or cut six Yukon gold potatoes into six pieces.
Peel and coarsely chop one medium onion into about one inch pieces.
Cut a whole head of garlic in half parallel to the base, set aside half for the chicken and toss the other half with the veggies.
Place all prepped veggies into a large mixing bowl.
Add two sprigs of fresh rosemary and drizzle in about a tablespoon of olive oil.
Season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper, then toss to coat.
Pat dry the 5 1/2 pound whole chicken inside and out with paper towels.
Transfer the chicken to a roasting pan with the breast side up.
Season inside the chicken with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
Stuff the chicken with one lemon cut in half, half of the head of garlic, and two sprigs of fresh rosemary.
Melt two tablespoons of unsalted butter and brush it all over the chicken.
Sprinkle the chicken with two teaspoons of salt and 1/2 teaspoon of black pepper.
Turn the chicken over and season the backside with salt and pepper.
Add the prepared vegetables around the chicken in the pan.
Tuck the wings behind the chicken to prevent browning.
Optionally tie the legs together with kitchen string for presentation.
Insert an oven-safe thermometer into the deepest part of the chicken thigh.
Place the rack in the lower 1/3 of the oven and roast at 425°F for about 80 to 90 minutes.
If the chicken breast starts to brown too much, create a foil shield over it.
Roast until the internal temperature reaches 165°F at the thigh or until juices run clear when cut into the thigh.
Transfer the chicken to a serving platter and let it rest for 15 minutes before serving.
