Place greaseproof paper at the bottom of the roasting tin to prevent sticking (optional).

Season the chicken with salt and black pepper all over and around the tray.

Drizzle approximately 2 tablespoons of sunflower oil over the chicken and rub it in with your hands to cover the chicken completely.

Cook the chicken in the oven for 30 minutes breast side down.

After 30 minutes, flip the chicken over to breast side up and return it to the oven.

Cook for another 45 minutes breast side up, totaling 1 hour 45 minutes of cooking time.

Before serving, cover the chicken with foil and let it rest for 10 to 15 minutes.
