Stir in minced garlic and cook until fragrant, about 1 minute.
Add sliced artichokes to the skillet and cook for another 3-4 minutes.
In a bowl, whisk together eggs, salt, and black pepper until well combined.
Pour the egg mixture over the artichoke mixture in the skillet.
Cook on medium-low heat until the edges set, about 5-7 minutes.
Using a plate, carefully flip the omelette to cook the other side for another 5 minutes.
Once cooked through, slide the omelette onto a serving plate.
Garnish with chopped parsley before serving.
