Combine 2 1/2 cups of all-purpose flour, 1 teaspoon of salt, and 1 teaspoon of sugar in a bowl.
Add 1 1/2 tablespoons of instant yeast and 3/4 cup of warm plant-based milk to the flour mixture.
Mix until a dough forms and knead for a few minutes until the sugar dissolves.
Cover the dough and let it rise for 1 hour until doubled in size.
Chop 4 onions finely and sauté in 2-3 tablespoons of butter until slightly browned.
Season the onions with 1 teaspoon of salt, 1/2 teaspoon of pepper, and 2 teaspoons of poppy seeds, then mix and let cool.
After the dough has risen, place it on a floured surface and divide it into 9 pieces.
Shape each piece into a bun and place on a baking tray lined with parchment paper.
Cover the buns with a cloth and let them rise for another 30 minutes.
Preheat the oven to 356°F (180°C).
Make a circle in the middle of each bun and fill with the onion mixture.
Brush the edges of each bun with egg wash.
Bake for 25 minutes until golden.
