Add 2 cups of cooked Korean rice to a bowl. Note that the rice should be a mix of white and brown rice, and not basmati or jasmine rice.

To the warm rice, add 1 tablespoon of finely minced carrots and 1 tablespoon of minced scallions (green part only).

Add 3-4 small pieces of toasted seaweed crumbles and 2 pinches of matsum (seasoning salt with MSG). If you don't have matsum, you can use regular salt instead.

Mix the ingredients by fluffing the rice gently, avoiding crushing the rice grains.

Add 1/2 tablespoon of sesame seeds to the mixture and grind it for about 30 seconds until it smells nutty, then add it to the rice mixture.

Taste the mixture and adjust saltiness if needed. Optionally, add 2 tablespoons of ground beef (prugi) for extra flavor and mix well.

Using disposable gloves, take some of the rice mixture and shape it into a round ball. It's best to do this while the rice is warm but not too hot.

To add a surprise filling, press down in the center of the rice ball, add a piece of avocado, cover it with more rice, and shape it back into a ball.

Optionally, you can add other fillings like soy sauce, spam, scrambled eggs, or edamame.
