Welcome to Snow Dog's Cooking, where we make dill pickle pasta salad.
Prepare 16 ounces of rotini noodles according to package instructions, cooking for about 9 minutes for al dente.
While the noodles are boiling, chop 2 tablespoons of fresh dill.
Shred about 1/2 cup of cheese using a salad shooter or grater.
Set the shredded cheese aside.
Chop 2 cups of dill pickles into small pieces.
Once the noodles are done, drain them and run them under cold water to stop the cooking process.
In a mixing bowl, combine 1/3 cup of mayonnaise, 1/3 cup of sour cream, and 1/3 cup of pickle juice.
Add 1/2 teaspoon of cracked black pepper, 1 teaspoon of garlic powder, 2 teaspoons of dried dill, and the 2 tablespoons of fresh dill to the bowl.
Mix the dressing until smooth and well combined.
In a large mixing bowl, add the drained noodles, chopped pickles, crumbled bacon, and shredded cheese.
Pour the dressing over the noodle mixture and fold gently to combine everything together.
Transfer the pasta salad to a storage container and enjoy.
