Peel and slice 4 large potatoes into medium coins, about half an inch thick.
Cut 1 red onion into half rings.
Prick the Maltese sausages with a fork.
Heat olive oil in a skillet over medium-high heat and brown the sausages.
Season the potatoes with pink Himalayan sea salt and coarsely ground black pepper, then toss gently in the skillet until they take on some color.
Add garlic flakes and coriander powder to the potatoes and toss to combine.
Add a can of chopped diced tomatoes and fill the can halfway with water, mixing well.
Add frozen peas and let the mixture simmer for a few minutes.
Pour the potato mixture into a casserole dish, arranging the potatoes on top.
Sprinkle fennel seed over the top of the dish.
Place the casserole in a moderate oven at 200°C (392°F) until the potatoes are crispy and the liquid bubbles up.
If the bake gets too dry, add a little water as needed.
Once done, top with fresh parsley and serve with crusty Maltese bread.
