Wash the potatoes really well to remove all the dirt.
Cut the potatoes in half and then slice them into about six pieces.
Put the potatoes in a pot with salted butter and cook them on the fire until done.
Chop off the ends of the green beans to prepare them.
Cut the green beans in half to make them more bite-sized.
Bring salted water to a boil and add the green beans once boiling.
Cook the green beans for about 6 to 7 minutes.
Slice the onion into thin slices and set aside.
Slice the garlic and set aside.
Slice the parsley finely and set aside.
Drain the green beans and rinse them in cold water to keep them crispy.
Heat a good amount of olive oil in a pan until hot.
Add the onions to the hot oil and fry for about a minute.
Season the onions with oregano and basil, and stir.
Add the garlic to the onions and stir to let the flavors absorb.
Once the onions are golden brown, add the drained green beans and potatoes to the pan.
Stir everything together to coat well.
Turn the heat down to medium-low and fry for about 2 minutes.
Add a bit of butter to the mixture and let it melt, stirring everything together.
Season with salt, black pepper, and finally add the parsley before serving.
