Preheat the oven to 350°F (175°C).
Take a 9-inch glass pie dish and roll out the store-bought pie crust into it.
Crimp the edges of the pie crust as desired.
Bake the pie crust in the oven for about 10 minutes to cook it halfway.
While the pie crust bakes, place the frozen chopped spinach in a kitchen towel and squeeze out excess liquid.
Transfer the drained spinach to a large bowl.
Add crumbled feta cheese and 1 cup of grated mozzarella cheese to the spinach.
Season with freshly ground black pepper and mix well.
Remove the pie crust from the oven and let it cool for about 10 minutes.
Add the spinach and cheese filling to the cooled pie crust, spreading it evenly.
In a medium bowl, break 4 eggs and add them to the bowl.
Add 1 cup of oat milk, 1 teaspoon of salt, 1 teaspoon of dried oregano, 1 teaspoon of onion powder, 1 teaspoon of garlic powder, 0.5 teaspoon of dried parsley, and 1 teaspoon of black pepper to the eggs.
Mix all the ingredients together with a whisk until well combined.
Pour the egg mixture over the spinach and cheese filling in the pie crust.
Cut grape tomatoes in half and place them on top of the quiche for decoration.
Bake the quiche in the preheated oven at 350°F (175°C) for 45 minutes or until a knife inserted comes out clean.
Remove the quiche from the oven and let it cool for 15 minutes before serving.
