Adjust the heat to maintain a simmer and cover the saucepan, cooking the apples for 20 to 30 minutes, stirring periodically.
Check the apples for doneness, looking for them to be soft and translucent, and adjust cooking time as needed.
Mash the apples to desired consistency using a fork, potato masher, or immersion blender.
Taste the applesauce and add sugar if desired, starting with about 1 tablespoon of brown sugar, and adjust to taste.
Optionally, add lemon juice, apple brandy, ground cinnamon, nutmeg, or butter for additional flavor.
Discuss storage options: refrigerate for a week, freeze for longer storage, or canning for preservation.
