Prepare jars by sterilizing them in boiling water for 10 minutes.
Chop rhubarb into small pieces and place in a large pot.
Hull and chop strawberries, then add to the pot with rhubarb.
Add sugar and lemon juice to the pot, stirring to combine.
Let the mixture sit for 30 minutes to release juices.
Add water and vanilla extract to the pot, then bring to a boil over medium heat.
Stir in pectin and salt, and continue boiling for 10 minutes, stirring frequently.
Check the consistency by placing a spoonful on a cold plate and letting it sit for a minute.
If the jam is too runny, boil for an additional 5 minutes and test again.
Once the desired consistency is reached, remove from heat.
Pour the hot jam into the prepared jars, leaving a little space at the top.
Seal the jars with lids and process in boiling water for 5 minutes to ensure a good seal.
Let the jars cool at room temperature, then store in a cool, dark place.
