Potato Cheddar Chive Bakes

4 large russet potatoes
1 cup shredded sharp cheddar cheese
1/4 cup chopped fresh chives
1/2 cup sour cream
1/4 cup milk
1/4 cup unsalted butter, melted
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1/2 cup breadcrumbs (optional)

Preheat the oven to 400°F (200°C).

Wash and scrub the potatoes, then pierce them with a fork several times.

Bake the potatoes in the preheated oven for about 45-60 minutes, or until tender.

Once the potatoes are cool enough to handle, cut them in half lengthwise and scoop out the insides into a mixing bowl.

Add the shredded cheddar cheese, chopped chives, sour cream, milk, melted butter, garlic powder, salt, and black pepper to the bowl with the potato insides. Mix until well combined.

Spoon the potato mixture back into the potato skins, mounding it slightly on top.

If desired, sprinkle breadcrumbs on top of the filled potatoes for added crunch.

Place the stuffed potatoes on a baking sheet and return them to the oven.

Bake for an additional 15-20 minutes, or until the tops are golden and bubbly.
