Dice 1/2 red onion and 3 cloves of garlic.
Heat a sturdy bottom saucepan over medium heat.
Add 2 tablespoons of light olive oil to the pan.
Add the diced red onion to the pan and stir to coat in the oil, seasoning with a little salt.
Sauté the onion for about 1-2 minutes until starting to soften.
Add the diced garlic to the pan and stir, cooking for another few minutes until the onions are completely soft and have a little color.
Add 8 oz of tomato sauce to the pan.
Fill the tomato sauce can with water almost to the top and add 1/2 cup of water to the pan.
Add 1/4 cup of honey to the mixture, adjusting for sweetness as desired.
Add 2 tablespoons of apple cider vinegar and 1 tablespoon of balsamic vinegar to the pan.
Add 1 tablespoon of molasses for additional sweetness and flavor.
Stir in 1 teaspoon of paprika, 1 teaspoon of salt, 1 teaspoon of liquid smoke, and 1/8 teaspoon of black pepper.
Mix all ingredients together with a spatula.
Let the sauce simmer for about 20 minutes to meld flavors and thicken.
After simmering, decide whether to leave the sauce chunky or blend it smooth.
If blending, pour the sauce into a blender or food processor and blend for about 20 seconds until smooth.
If you want a thicker sauce, let it simmer for an additional 5-10 minutes; for a thinner sauce, reduce the simmering time.
