Cut pork butt into smaller cubes.

Brown the pork butt in a large pot.

Add chopped onions, bell peppers, garlic, and celery to the pot and mix well.

Cook the vegetables until translucent, about 10-15 minutes.

Add beef liver to the pot and mix well.

Add enough water to cover the pork and vegetables.

Add 1/2 cup of Sweet Smoky Joe Creole kick seasoning and mix.

Cover the pot and boil for about 3 hours until the pork is tender.

Grind the cooked pork, liver, and vegetables using a grinder with a 10 mm dye.

Add 12 cups of cooked white rice to the ground mixture.

Chop and add 5 bunches of green onions and 2 bushels of parsley to the mixture.

Add broth from boiling to achieve desired moisture, about 3 cups.
