Peel and chop 5 medium-sized Idaho russet potatoes, about 4 cups total.

Boil the potatoes until cooked through but still holding their shape, then drain and allow to cool a bit.

Season the potatoes with salt and black pepper.

Add smoked paprika and lemon juice to the potatoes, along with soy sauce, and toss gently to combine without breaking the potatoes.

Incorporate mayonnaise into the mixture and toss gently again.

Add chopped green onions and crumbled bacon to the salad.

Taste the salad and adjust seasoning if necessary.
