2 medium potatoes, peeled and diced
2 whole red snapper, cleaned and scaled
2 tablespoons olive oil
2 cups baby spinach leaves
1/2 teaspoon salt
1 cup fish stock
1/4 cup unsalted butter
1 cup sourdough croutons
1/4 cup almonds, sliced
1 lemon, sliced
1/4 cup capers, rinsed and drained
1 tablespoon fresh thyme, chopped
1/4 cup fresh parsley, chopped
1/4 cup semi-dried tomatoes, chopped

Peel and slice the potato.

Poach the potato in olive oil.

Season the snapper only on the flesh side.

Pan-fry the snapper skin side down for 3-4 minutes to crisp the skin.
