Preheat the oven to 450°F (232°C).
In a large bowl, combine 4-5 cups of broccoli florets and 4-5 cups of cauliflower florets.
Add 1.5 cups of diced bell pepper (red and/or yellow).
Add 1 cup of sliced carrots, cut about 1/4 inch thick, preferably on a diagonal.
Add 1.5 cups of red onion wedges, sliced into long wedges.
Add 1 to 2 tablespoons of minced garlic, depending on preference.
Drizzle 3 tablespoons of olive oil over the vegetables and mix everything together.
Transfer the vegetable mixture to a baking dish (preferably glass).
Sprinkle with kosher salt (about 1/2 teaspoon or to taste) and ground fresh pepper.
Roast in the preheated oven for 25-30 minutes, stirring every 10 minutes, until tender and edges are browned.
Remove from the oven and sprinkle with Parmesan and Romano cheese before serving.
