Cultural Context
Fermented carrots have roots in various cultures, often used as a way to preserve vegetables. This method enhances flavors and adds probiotics, making them a healthy addition to meals. Today, they are popular in many cuisines around the world, often enjoyed in salads or as a crunchy side.
Grate 580 g of carrots and place them in a bowl.
Chop 4 cloves of garlic roughly and add to the carrots.
Add 2 red onions to the bowl.
Add 7 g of salt to the mixture.
Add 3/4 teaspoon of brown mustard seeds and 3/4 teaspoon of gold mustard seeds to the bowl.
Mix all the ingredients together with your hands for about 5 minutes until liquid starts to form.
Let the mixture stand for about 10 minutes to allow more liquid to develop.
Prepare a large glass jar (1 liter) by pouring boiling water into it and then tossing the water out.
Pack the carrot mixture into the jar using your hands, pressing it down to make it compact.
Slice horseradish thinly and place it on top of the packed carrots to cover the surface.
Clean the rim of the jar to ensure a good seal.
Seal the jar and place it on a tray at room temperature (ideal is 18 to 20°C).
Let the jar rest for 10 days at room temperature.
After 10 days, move the jar to the refrigerator and keep it there for 6 to 8 weeks before consuming.
