1 large beetroot
4 medium carrots
1 large potato or 2 medium potatoes boiled
1 cup frozen peas boiled
1 medium onion
2 tablespoon cashews
2 teaspoons olive oil
2 green chillies
5 to 6 garlic cloves
1 teaspoon cumin powder
3/4th teaspoon garam masala
1/4th teaspoon ginger powder
Pink himalayan rock salt
Handful chopped coriander / cilantro leaves
Black pepper
Chunky chaat masala
1/4th cup almond flour

First roast shredded beetroot and carrot in the air fryer for 4 to 5 min and keep aside.

Heat a pan, drizzle oil, add green chillies, garlic, crushed cashews, saute. Then add onion and saute until translucent. Add cumin powder, garam masala, ginger powder, and salt. Saute and keep it aside.

In a mixing bowl, add shredded beet & carrot roasted from the air fryer, add boiled potato, add onion cashew mix, add boiled peas, chopped coriander leaves, salt to taste, black pepper, chaat masala, & almond flour.

Now form a desired shape and make cutlets to air fry.

Air fry for 10 min first, then flip and air fry for another 10 minutes. Adjust the temperature according to your air fryer. Lightly brush with oil in between.

Serve it hot or store it in the fridge to make sandwiches for lunch. Enjoy!
