Instructions
- 1Cook rice according to package instructions and set aside.
- 2Heat olive oil in a skillet over medium heat.
- 3Add chopped onion and bell peppers; sauté until softened, about 5 minutes.
- 4Stir in minced garlic, cumin, chili powder, salt, and pepper; cook for 1-2 minutes until fragrant.
- 5Add black beans and corn; stir to combine and heat through.
- 6Remove from heat and let cool slightly.
- 7In a large bowl, combine rice, bean mixture, cilantro, and lime juice; mix well.
- 8Lay a tortilla flat and spoon filling onto the center.
- 9Fold in the sides and roll tightly to form a burrito; repeat with remaining tortillas.
- 10Wrap each burrito in foil or plastic wrap and place in a freezer-safe bag.
- 11Label and date the bag; freeze for up to 3 months.
- 12To reheat, unwrap and microwave for 2-3 minutes or until heated through.
