Heat a pan and add oil and butter.
Spoon 1-2 tablespoons of batter into the pan, cooking for about 2 minutes on each side until golden brown.
Remove from pan and place on paper towels to soak up excess oil.
Serve with chive cream, smoked salmon, and garnish with extra chives and black pepper.
