Wash the pork belly chunks with white vinegar or lime juice, rinse, and pat dry.

In a bowl, season the pork with 1.5 teaspoons of salt, 1 teaspoon of Dominican oregano, 1 teaspoon of garlic powder, 0.5 teaspoon of black pepper, 0.5 teaspoon of onion powder, and 0.5 teaspoon of adobo. Mix well and let marinate for at least 30 minutes, preferably up to 2 hours.

Place the seasoned pork into a deep pan with 1 cup of water. Bring to a boil over medium-high heat.

As the water evaporates, the pork will start sweating out its own fat. Once the water is gone, lower the heat and add 1 cup of oil.

Fry the pork until golden and crispy, stirring occasionally.

Once crispy, squeeze the juice of 2 fresh limes over the pork.
