Transfer the sugared pumpkin along with all its juice into a cooking pot.

Add 150 ml of water, 1 cinnamon stick, 1-2 star anises, and the sliced ginger.

Once the syrup boils, reduce heat to minimum and simmer for 10-15 minutes.

Remove from heat and let the pumpkin cool completely in the syrup (at least 1-2 hours).

Place the baking sheet in the oven and dry candied fruit with the door ajar for 3-5 hours at 80-100°C (175-210°F) with convection.
