Preheat the oven to 200°C.

Chop the carrot and apple in the Thermomix for a few seconds.

Scrape down the sides of the bowl.

Cut the banana into a few pieces and add it to the bowl.

Add 170 g of self-raising flour to the bowl.

Add 50 g of rolled oats to the bowl.

Add 2 eggs to the mixture.

Add 100 g of Greek style natural yogurt to the bowl.

Mix all ingredients together for 3 seconds on speed 4 in the Thermomix.

Divide the mixture evenly between a 12 muffin tray using silicone muffin liners.

Sprinkle 1 tablespoon of granola on top of the muffins.

Bake in the oven at 200°C for 5 minutes.

Turn down the oven temperature to 180°C and bake for a further 20 minutes.
