Chicken fry is a beloved dish in many cultures, often associated with comfort food. Its origins can be traced back to Southern United States cuisine, where fried chicken became a staple for family gatherings and celebrations. Today, variations exist worldwide, each with unique spices and techniques, making it a popular dish in various culinary traditions.
Start by taking 1/2 kg of chicken pieces, ensuring they are not too big or too small.
Add 1 tablespoon of salt and 2 tablespoons of white vinegar to the chicken.
Mix the salt and vinegar with the chicken thoroughly to clean it.
Let the chicken marinate with salt and vinegar for 5 minutes.
Add water to the chicken until it is fully submerged and mix again.
Leave the chicken in the water for 10 minutes to remove any smell and blood.
After 10 minutes, rinse the chicken thoroughly with water 2-3 times and then pat it dry.
In a bowl, add 1 teaspoon of Kashmiri red chili powder, 1 teaspoon of salt, and the juice of 2 lemons to the chicken.
Mix these ingredients well with the chicken for 1-2 minutes.
Next, add 1 tablespoon of red chili powder, 1 tablespoon of coriander powder, 1/2 teaspoon of turmeric powder, 1/2 teaspoon of crushed red chili, and 1 teaspoon of cumin powder to the chicken.
Add 3-4 tablespoons of yogurt and a pinch of food color to the mixture.
Do not forget to add 1 teaspoon of ginger garlic paste, which was missed in the video but is essential.
Mix all the ingredients well into the chicken, ensuring the spices coat it evenly.
Let the chicken marinate for about 2 hours.
Heat oil in a pan until it is hot but not smoking.
Carefully add the marinated chicken pieces to the hot oil.
Do not stir immediately; let the chicken cook for about 1 minute before stirring to set the coating.
After 2 minutes, gently turn the chicken pieces to cook the other side.
Fry the chicken for about 8-10 minutes, stirring occasionally to ensure even cooking.
Increase the flame towards the end to achieve a nice color on the chicken.
Once cooked, remove the chicken from the oil and place it on a plate.
Fry the remaining chicken pieces in the same manner.
