Chicken fry is a beloved dish in many cultures, often associated with comfort food. Its origins can be traced back to Southern United States cuisine, where fried chicken became a staple for family gatherings and celebrations. Today, variations exist worldwide, each with unique spices and techniques, making it a popular dish in various culinary traditions.
Take 2 pieces of chicken breast and divide them into 4 parts.
Flatten the chicken pieces using a heavy object or rolling pin to equal thickness.
Squeeze juice from half a lemon over the chicken.
Sprinkle 1 teaspoon of black pepper powder on the chicken.
Add salt to taste on the chicken.
If available, add 1 tablespoon of olive oil to the chicken for marination.
Coat both sides of the chicken with the marinade and let it rest for 15 to 20 minutes.
Prepare the filling by mixing mint leaves, coriander leaves, green chilies, garlic, cashews, and walnut in a blender.
Add 1/2 teaspoon of black pepper and salt to the mixture according to taste.
Add 1 tablespoon of yogurt to the mixture and blend to a coarse paste without adding water.
Slice onion and capsicum into rings for the filling.
Take a piece of chicken, spread a generous amount of the paste on top, and place onion and capsicum rings in the center.
Grate cheese over the filling according to preference.
Fold the chicken over the filling and secure it with toothpicks.
Repeat the process for the remaining chicken pieces.
Heat oil in a pan over medium heat for shallow frying.
Cover the pan and cook for 5 minutes to ensure the chicken is tender.
Flip the chicken pieces to brown both sides until they have a nice color.
Prepare a dip by mixing yogurt with some water to adjust the consistency and check the seasoning.
