In a medium skillet, heat 1 Tbsp butter and 1 tsp olive oil over medium heat.

Add 1 thinly sliced medium yellow onion and cook for 10 minutes until softened and browning.

Season with salt and a pinch of sugar and continue sautéing for 10 to 15 minutes, or until golden brown in color.

Add ½ tsp white balsamic vinegar, pepper to taste, and the leaves of 2 sprigs of thyme, and stir to combine. Let cool.

On a lightly floured surface, roll 1 sheet of puff pastry into a 12” square.

Place 1 8-oz wheel of brie in the center of the pastry, top it with caramelized onions, and then wrap the pastry around the cheese, pressing the dough to seal.

Brush with 1 beaten egg and bake in a 400º oven for 35 minutes or until golden brown.

Let the baked brie cool for 10 minutes before slicing into it.
